All you need is cottage cheese, I use full fat, cacao powder, or cocoa powder, and a liquid sweetener like maple syrup or honey to make these delicious little treats. My favorite part is the creamy center and the salt to offset for the sweetness.

Healthy Chocolate Truffles

Equipment
- mini food processor
- mini scooper
Ingredients
- 1 cup cottage cheese
- 3-4 tbs maple syrup (or honey)
- 3/4 cup cacao powder
Chocolate Coating:
- 3/4 cup chocolate chips
- 1 tsp coconut oil
- flaky sea salt

Instructions
- Add your cottage cheese to a mini food processor and pulse until smooth. Then add in maple syrup and cacao powder and pulse until smooth, taking care to stop and scrape down the sides when needed. Transfer mixture to a container, smooth out and cover and refrigerate for 4 hour or overnight.
- Using a scooper, measure out about 2 teaspoons and form into a ball and place on a parchment lined plate. Repeat and then transfer to your freezer for 30 minutes – 1 hour.
- Melt the chocolate chips and coconut oil over low heat in a small pot. Stir constantly to avoid burning. Once melted and smooth, transfer the melted chocolate to a small bowl. Working quickly, dip the balls one at a time into the chocolate and then place back onto the parchment lined plate. Repeat. Once done, sprinkle on some flaky salt and transfer to your fridge to set for 10 minutes.
